FoodLab: Costa Mushrooms

In collaboration with local industry partner, Costa Mushrooms, local students are challenged to design an innovative solution to the problem of mushroom stem waste. They are invited to design a food product – including a recipe, package design, and pitch – using the mushroom stems that otherwise go to waste.
